Whole val, also known as hyacinth bean or lablab, are oblong, plump, creamy, buff-colored beans with a white stripe on one side. The thick, chewy skins should be removed after soaking. Val is a favorite of vegetarians. It is often cooked with eggplant, drumsticks, and spices, then eaten with roti or chapati.
